‘Comfort food for the soul, a big family hearty dish’

Serves 10     Preparation time     30 minutes     Difficulty     Hard    

A dish that is very cheap and easy to make yet very filling and ideal for big families or for dinner parties. It is a traditional dish made by the older women in Turkish Cypriot families. If you are a lover of pasta than this Turkish Cypriot dish is for you. 

Ingredients

1 packet of thick long macaroni
2 large onions (finely chopped)
½ bunch parsley (finely chopped)
Seasoning (salt, pepper)
Water
1 chicken or vegetable stock cube
4 cups milk
4 spoon of flour
2 eggs (beaten)
1 haloumi cheese grated

Preparation:

Step 1: Warm the water add pinch of salt once boiled add the pasta for it to boil

Step 2:  Once boiled drain the water remove half of the pasta place in the oven dish and leave the pasta on the side

Step 3: Fry the mince with the onions and towards the end add the parsley with seasoning.

Step 4: Once mince cooked at it on top of the pasta in the oven dish and add the rest of the pasta on top of the mince.

Step 5: Add the milk in the bowl, eggs and the flower and whisk. Once the floor is mixed with the milk cook till it becomes a cream source.

Step 6: Add the cheese in the source and pour over the macaroni in the oven dish.

Step 7: Cook till brown on top and serve.

You can enjoy this meal with salad, yogurt with other meals.
