Ingredients
2 cup yellow lentils (washed well)
7 cups of water
1 cup rice (washed)
3 tbsp of olive oil or sunflower oil
Seasoning (salt or pepper)
1 chicken or vegetable stock
Lemon juice
Onions and garlic (personal choice)
Method
Step 1: Chop the onions and garlic, fry in the pot with olive oil until browned
Step 2: Once washed add rice and the lentils to the pot
Step 3: Add the stock and the water and let it simmer
Step 4: Once the soup thickens add the lemon juice as desired
Step 5: You can enjoy the soup as it is or put it through the blender for a thinner taste
You could enjoy your soup with bread and black olives.
