‘Any meze would be incomplete without Humus’

Serves 4 Preparation time 30 minutes Difficulty Easy

One the main dishes of any meze in Cypriot restaurants or at home. It is very easy to make, and it is the dip that adds to almost any food for extra taste. You can serve it as a starter or a side dish to any Turkish meal. 

Method

Step 1: Place the chickpeas in a mixer

Step 2: Once mixed add sesame paste and mix

Step 3: Add the chopped garlic and olive oil and mix well until you have a thick paste

Step 4: Add the lemon and seasoning as your choice and mix well again

Step 5: Once the mixture becomes a mashie substance it is ready, it shouldn’t be too thick or too thin

Step 6: Once the mixture is ready serve on a plate on top you put red pepper, chopped parsley and a bit of olive oil. You can also add some olives on top for decoration this again is a personal choice

Humus can be enjoyed next to chicken or meat dishes along with any meze and dip dishes.
